Freezer cooking!
Tonight I made thai green curry with chicken, vegetables, and jasmine rice. All the ingredients were Trader Joe’s semi-prepared food. It’s a great meal to make as a college student. I sautéed the chicken and vegetables in a little bit of olive oil, covering the pan occasionally to help steam the vegetables. Then I added the thai curry simmer sauce and continued cooking. I microwaved the jasmine rice as directed and put the chicken and vegetable curry on top.

I got these babies at Costco today! I think they would make a great breakfast for when I’m in the office. It has oats, dried cranberries, raisins, flax seeds, sunflower seeds, almonds, walnuts, cranberries, and cinnamon. I can make it in the microwave in the office. I’ll let you guys know how it is when I try it!

Create your own smoothie with yogurt, banana, raspberries, and mango (2 fruits, 1 milk)
Tofu, black bean, bell pepper, onion stir fry (3 proteins, 1 vegetable), Bitter greens (1 v), Roasted sweet potato wedges (3 carbs)
I would love to try this over some quinoa or another grain! I think that this would make a great meal to make the night before and take to school/work/university. Depending on how much of everything you add it could be 3 carbs, 2 proteins, 1-2 fats, 2 vegetables.

Cookie Dough Greek Yogurt - add 1 tbsp nut butter, 1 tbsp sweetener, 1 tbsp mini chips, and 1/4 tsp vanilla to Greek yogurt.

My grocery store just started stocking a new brand of greek yogurt, so naturally I had to try it! I really liked this flavor and it was a lot more interesting than the plain peach flavor that I usually buy.
I made dinner for my family tonight!
My breakfast was so cute! Also, I’m learning to eat the yolk part of eggs.

I think that this was the yummiest smoothie I have ever made. It was a bit too large for my blender to handle properly.
- 1/2 banana
- fresh strawberries
- frozen mango
- frozen raspberries
- a splash of grapefruit juice
- a cup of plain greek yogurt
Dinner at my Desk:
Whole-wheat udon stir fry with chicken, broccoli, and kale. A homemade iced chai latte. (4 carbs, 2 vegetables, 3 proteins, 1 milk)
